Filling per Burrito:
*¼ cup Chicken Carnitas
*1 ½ tbsp Mexican Rice
*1 ½ tbsp Mexican Pinto Beans
*½ tbsp Pickled red onions
*½ tbsp Pickled diced carrots
Optional Ingredients per Burrito:
1-2 tsp Crumbled Fetta
Chopped avocado
½ tbsp Sour Cream (whipped with a ¼ tsp of water for drizzle)
*1-2 tsp Salsa Verde or Fresca (from Diego’s recipes)
To wrap:
Brown paper, string, or tape (if you want to make a burrito to take on the go)
Instructions:
Warm the Wraps:
Warm the number of wraps you want to use according to the packet instructions.
Keep them warm in a tortilla warmer or by wrapping them in a clean tea towel.
Prepare the Filling Station:
Set up covered bowls with hot ingredients (Chicken Carnitas, Mexican Rice, Mexican Pinto Beans) and cold ingredients (Pickled red onions, pickled diced carrots, optional ingredients like crumbled feta, chopped avocado, sour cream, and salsa).
Assemble the Burrito:
Lay the warm wrap flat and place the following ingredients in the center (leaving a 10 cm gap at both ends to avoid overfilling):
½ tbsp shredded Chicken Carnitas
1 ½ tbsp Mexican Rice
1 ½ tbsp Mexican Pinto Beans
Pickled red onions and diced carrots
Optional: crumbled feta, avocado, sour cream, and salsa
Wrap the Burrito:
Fold the ends of the wrap inward, then roll the wrap tightly from the bottom up, keeping the fillings secure.
For extra convenience, you can wrap the burrito in baker’s paper and tie the ends with string or tape.
