Diego’s Flour Wraps (Classic, Low Carb, or Gluten-Free)
Filling per Burrito:
*¼ cup Pork Carnitas
*1 ½ tbsp Mexican Rice
*1 ½ tbsp Mexican Pinto Beans
*½ tbsp Pickled red onions
*½ tbsp Pickled diced carrots
Optional Ingredients per Burrito:
1-2 tsp Crumbled Feta
Chopped avocado
½ tbsp Sour Cream (whipped with a ¼ tsp of water for drizzle)
*1-2 tsp Salsa Verde (Diego's Recipes) or Hot Sauce of choice
To wrap:
Brown paper, string, or tape (to wrap up after making, if you're taking it on the go)
Instructions:
Warm the Wraps:
Warm the wraps according to the instructions on the packet.
Keep the wraps warm by placing them in a tortilla warmer or wrapping them in a clean tea towel.
Prepare the Filling Station:
Set out covered bowls with hot ingredients (Pork Carnitas, Mexican Rice, and Mexican Pinto Beans) and cold ingredients (Pickled red onions, pickled diced carrots, optional ingredients like crumbled feta, avocado, sour cream, salsa, and hot sauce).
Assemble the Burrito:
Lay the warm wrap flat.
In the center, add the following (leave a 10 cm gap at the ends to avoid overfilling):
½ tbsp shredded Pork Carnitas
1 ½ tbsp Mexican Rice
1 ½ tbsp Mexican Pinto Beans
Pickled red onions and diced carrots
Optional: crumbled feta, chopped avocado, sour cream, salsa or hot sauce
Wrap the Burrito:
Fold the ends of the wrap inward, then roll tightly from the bottom upwards, keeping everything secure inside.
You can wrap the burrito in baker’s paper and tie it with string or tape to keep it secure if you're taking it on the go.
