Ingredients:
3 Diego’s Food Service 10-inch or Classic/Low Carb Tortillas
1 cup unsalted butter, melted
1 cup packed brown sugar
¼ cup chopped pecans
1 tsp cinnamon
1 cup icing sugar (or stevia equivalent)
2-3 tsp milk
Instructions:
Preheat the Oven:
Preheat the oven to 190°C.
Prepare Cinnamon-Sugar Mixture:
In a container, mix the cinnamon and sifted brown sugar.
Set aside about ¼ of the melted butter and ¼ of the cinnamon-sugar mixture for topping the scrolls later.
Warm the Tortillas:
Warm the tortillas according to the package instructions to soften them for easier rolling.
Assemble the Scrolls:
Brush the warmed tortillas with melted butter, then evenly sprinkle with chopped pecans and the brown sugar-cinnamon mixture.
Stack the tortillas on top of each other and roll them into a log shape.
Cut the rolled log into 6 scrolls, each approximately 2.5 cm thick.
Prepare to Bake:
Spray a mini muffin tin with oil and place the scrolls into the tin.
Drizzle the reserved melted butter over the scrolls and sprinkle with the reserved cinnamon-sugar mixture.
Bake the Scrolls:
Bake for 20-25 minutes, or until the sugar begins to caramelize and the scrolls turn golden brown.
Let Them Cool:
Allow the scrolls to stand for about 5 minutes before serving.
