MARGARITA GRILLED PRAWNS
INGREDIENTS:
16 prawns, peeled and deveined (fresh, firm, and chilled)
3 cloves garlic, minced
2 tsp minced jalapeños
2 tsp smoked paprika
1 ½ tsp onion powder
1 ½ tsp cumin
2 tsp lime juice
2 tsp lime zest
1 tbsp tequila
2 tbsp margarita mix
1 cup chopped coriander (rinsed and patted dry leaves)
1 tsp salt
Vegetable oil (for flat BBQ plate or cast-iron skillet)
INSTRUCTIONS:
In a blender or bullet, combine all ingredients except for the prawns. Blend until smooth.
Pour the marinade over the prawns, ensuring they are evenly coated. Cover and refrigerate for 2 hours, gently folding halfway through.
Heat oil on a flat BBQ plate or cast-iron skillet over medium-high heat.
Grill or cook the prawns for ~3 minutes until they turn a deep pink and are fully cooked but not overdone.
