Magarita Chargrilled Prawns

MARGARITA GRILLED PRAWNS

INGREDIENTS:

  • 16 prawns, peeled and deveined (fresh, firm, and chilled)

  • 3 cloves garlic, minced

  • 2 tsp minced jalapeños

  • 2 tsp smoked paprika

  • 1 ½ tsp onion powder

  • 1 ½ tsp cumin

  • 2 tsp lime juice

  • 2 tsp lime zest

  • 1 tbsp tequila

  • 2 tbsp margarita mix

  • 1 cup chopped coriander (rinsed and patted dry leaves)

  • 1 tsp salt

  • Vegetable oil (for flat BBQ plate or cast-iron skillet)

INSTRUCTIONS:

  1. In a blender or bullet, combine all ingredients except for the prawns. Blend until smooth.

  2. Pour the marinade over the prawns, ensuring they are evenly coated. Cover and refrigerate for 2 hours, gently folding halfway through.

  3. Heat oil on a flat BBQ plate or cast-iron skillet over medium-high heat.

  4. Grill or cook the prawns for ~3 minutes until they turn a deep pink and are fully cooked but not overdone.
