INGREDIENTS:
500g *Tomatillos canned
1 medium to large white onion cut roughly into chunks
2 cloves of garlic grated or finely minced
4 tbsp fresh coriander leaves
1 fresh jalapeno deseeded and remove the top
1 greenhorn chilli deseeded and remove the top
2 tsp salt
Juice from a large juicy lime
INSTRUCTIONS:
Add onion, jalapeno and greenhorn chilli to a food processor or bullet and pulse till roughly chopped
Add tomatillos and blitz until a reasonably smooth salsa is formed
Transfer to a bowl and stir in the chopped leaves of one bunch of coriander along with salt and lime juice from the lime.
For best results, cover and refrigerate for a minimum of 60 minutes to allow flavours to mingle.
Once cooled, store in sealed containers in the freezer or keep for 5-7 days in the fridge in a sealed container
