INGREDIENTS:
6 medium fresh firm Roma Tomatoes, finely chopped (~½ cm in size)
1 medium red or white onion, finely chopped (~½ cm in size)
1-2 tbsp pickled jalapeños slices (remove seeds as much as possible), finely chopped (~¼ cm in size)
2 medium ripe limes, juiced (lemons can also be used)
1 cup roughly chopped coriander (washed and patted dry prior to chopping)
Salt, to taste
Optional: 1 can La Costeña Homestyle Mexican Salsa for extra flavor
INSTRUCTIONS:
Prepare the Ingredients
Place the chopped tomatoes into a bowl.
Add the chopped onions, pickled jalapeños, lime juice, and coriander to the bowl. Gently fold the ingredients to combine.
Season and Rest
Generously salt the mixture, starting with ½ tbsp. Taste and add more salt in ½ tsp increments as needed.
Let the salsa rest for 20 minutes for the flavors to blend.
Adjust and Serve
Stir the salsa and check if more salt is required.
Serve the same day for the best taste, or store for up to 3 days in an airtight container in the refrigerator.
