INGREDIENTS:
- 500g Tomatillos (canned) 
- 1 medium to large white onion, roughly cut into chunks 
- 2 cloves of garlic, grated or finely minced 
- 4 tbsp fresh coriander leaves 
- 1 fresh jalapeño, deseeded and with the top removed 
- 1 green horn chilli, deseeded and with the top removed 
- 2 tsp salt 
- Juice from 1 large, juicy lime 
INSTRUCTIONS:
- Prepare the Vegetables: - Add the onion, jalapeño, and green horn chilli to a food processor or bullet. Pulse until roughly chopped. 
 
- Blitz the Salsa: - Add the tomatillos to the food processor and blitz until the mixture forms a reasonably smooth salsa. 
 
- Combine & Season: - Transfer the salsa to a bowl. Stir in the chopped coriander leaves, salt, and lime juice. 
 
- Let the Flavours Develop: - For the best flavour, cover the salsa and refrigerate it for at least 60 minutes to allow the flavours to mingle. 
 
Storage & Serving:
- Storage: - The salsa can be stored in an airtight container in the refrigerator for up to 5-7 days or frozen for longer storage.
