INGREDIENTS:
500g Tomatillos (canned)
1 medium to large white onion, roughly cut into chunks
2 cloves of garlic, grated or finely minced
4 tbsp fresh coriander leaves
1 fresh jalapeño, deseeded and with the top removed
1 green horn chilli, deseeded and with the top removed
2 tsp salt
Juice from 1 large, juicy lime
INSTRUCTIONS:
Prepare the Vegetables:
Add the onion, jalapeño, and green horn chilli to a food processor or bullet. Pulse until roughly chopped.
Blitz the Salsa:
Add the tomatillos to the food processor and blitz until the mixture forms a reasonably smooth salsa.
Combine & Season:
Transfer the salsa to a bowl. Stir in the chopped coriander leaves, salt, and lime juice.
Let the Flavours Develop:
For the best flavour, cover the salsa and refrigerate it for at least 60 minutes to allow the flavours to mingle.
