1 tbsp olive oil
2 cloves garlic (minced)
4 cups corn kernels (cut from ~5-6 ears of fresh corn or frozen corn, defrosted)
4 spring onions (white part only, thinly sliced)
1 tsp salt
½ tsp ground black pepper
1/3 cup Best Foods mayonnaise (or other non-sweet egg mayonnaise)
1/3 cup plain Greek yogurt (avoid sweet varieties)
1 tsp pickled jalapeño (or 1 fresh deseeded jalapeño, finely chopped)
1 tsp lime zest
1 ½ tbsp lime juice
½ tsp Tajín or chili powder (plus a bit more to garnish)
½ cup crumbled feta
½ cup fresh chopped coriander leaves (washed and patted dry before chopping)
Favorite hot sauce (like Tapatio or Tabasco) to taste (optional)
Tortilla Chips or fresh cut veggies for serving
INSTRUCTIONS:
Cook the Corn:
Heat the olive oil in a large skillet over medium-high heat.
Add the garlic and cook, stirring for about 30 seconds, until it turns a light golden color.
Add the corn, spring onions, salt, and black pepper. Cook, stirring occasionally, until the corn brightens in color, about 3-4 minutes.
Cool the Mixture:
Once cooked, transfer the corn mixture to a large bowl and set aside to cool for a few minutes (about 3 minutes). This is to prevent the yogurt and cheese from melting when added.
Prepare the Dip:
Stir in the mayonnaise, Greek yogurt, jalapeño, lime zest, lime juice, Tajín (or chili powder), feta, coriander, and a few shakes of your preferred hot sauce (if using).
Taste the dip and adjust with more salt, pepper, hot sauce, or lime juice as needed.
Serve:
Spoon the dip into a serving bowl. Garnish with a sprinkle of Tajín or chili powder, and some fresh coriander or sliced spring onions.
Serve immediately, or refrigerate for at least 30 minutes for the flavors to meld.
Storage:
Leftovers can be stored in an airtight container for up to 2 days in the fridge.
Tips:
Be sure the avocados are not overly ripe; a firm texture is best, but not fully hard. Hass avocados are ideal.
