INGREDIENTS:
2 ripe avocados
2 tsp finely diced & deseeded pickled jalapeños
4 tbsp finely diced red onion
4 tbsp diced & deseeded Roma tomatoes
1 lime (juiced)
2 tbsp fresh coriander leaves (rinsed, patted dry, and julienned)
Salt & pepper to taste (~1/2 tsp each)
4 tbsp pomegranate seeds
INSTRUCTIONS:
Prepare the Avocados:
Cut the avocados lengthwise, carefully using the knife to hit the seed and twist it out.
Score both halves of the avocado while still in the skin into cubes.
Scoop the cubes out with a medium-sized spoon and place them into a bowl.
Combine Ingredients:
Add the pickled jalapeños, red onion, Roma tomatoes, lime juice, and fresh coriander to the avocado cubes.
Gently mix, being careful not to mash or bruise the avocado cubes, so they retain some shape and texture.
Top with Pomegranate:
Sprinkle the pomegranate seeds over the top and gently mix.
Season:
Add salt and pepper to taste (~1/2 tsp each).
Tips:
Make sure the avocados are not overripe — they should have a bit of firmness but not be hard. Hass avocados are ideal for this recipe.
