Chicken Carnitas Tostada

Ingredients:

  • Diego’s packet of either White Corn Tortillas or Yellow Corn Tortillas

  • 500g Chicken Carnitas Meat

  • Canola, vegetable, or olive oil (for frying the corn tortillas into crisp tostadas)

  • Pickled red onions (or use store-bought or drained fermented red cabbage)

  • White cabbage, finely shredded

  • Sour cream, thinned with a bit of water

  • Favorite hot sauce (for serving on the taco/tostada under the meat)

  • Crumbled feta

  • Optional: Basic guacamole or 1 medium diced avocado

  • Optional: Mexican rice and Mexican pinto beans

  • Salsa verde or salsa fresca for topping

Instructions:

  1. Prepare the Tostadas:

    • Line a plate or dish with paper towels to drain off the tostadas after frying.

  2. Heat the Oil:

    • In a medium pot or frying pan (with at least a 7 cm depth), heat enough oil to fit the tortillas, aiming for a temperature of 177-180°C. Use a candy thermometer or another recommended thermometer to check the oil temperature.

  3. Fry the Tortillas:

    • Place 1 tortilla (depending on the size of the pot/pan) into the heated oil.

    • Use a metal spatula with holes to press down on the tortilla(s) repeatedly to ensure they are fully submerged in the oil.

    • Fry for approximately 2 minutes until the tortillas turn golden in color.

    • Using tongs or a spatula, remove the tostada from the oil and place it on the paper towel-lined plate to drain. Add a dash of salt to each tostada.

    • Repeat the process with remaining tortillas, making sure the oil returns to the proper temperature before frying the next batch.

  4. Prepare the Chicken Carnitas:

    • While the tostadas are draining, warm the Chicken Carnitas Meat (either by reheating it in a pan or in the microwave).

  5. Assemble the Tostadas:

    • Place the fried tostadas on a serving platter.

    • Spread a thin layer of thinned sour cream on each tostada.

    • Add a generous portion of the Chicken Carnitas Meat on top of the sour cream.

    • Top with pickled red onions (or fermented red cabbage), shredded white cabbage, and a sprinkle of crumbled feta.

    • If desired, add a spoonful of guacamole or top with diced avocado.

    • Serve with salsa verde or salsa fresca and optional Mexican rice and Mexican pinto beans.

  6. Serve:

    • Enjoy your delicious tostadas with family and friends, allowing everyone to build their own tostada with the ingredients provided!
