Ingredients:
Diego’s packet of either White Corn Tortillas or Yellow Corn Tortillas
~500g Mexican Shredded Beef
Canola, vegetable, or olive oil (for frying the corn tortillas into crisp tostadas)
Pickled red onions or store-bought or drained fermented red cabbage
White cabbage, finely shredded
Sour cream, thinned with a bit of water
Favorite hot sauce (for serving on the taco/tostada under the meat)
Crumbled feta
Optional: Basic guacamole or 1 medium diced avocado
Optional sides: Mexican rice and Mexican pinto beans
Instructions:
Prepare the Tostadas:
Line a plate or dish with paper towels to drain the tostadas after frying.
Heat the Oil:
In a medium pot or frying pan with at least a 7 cm depth, heat enough oil to fully submerge the tortillas. The oil should be heated to 177-180°C. Use a candy thermometer or another thermometer suitable for hot oil to check the temperature.
Fry the Tortillas:
Place 1 tortilla (depending on the size of your pot/pan) into the heated oil.
Using a metal spatula with holes, press down on the tortilla repeatedly to ensure it’s fully submerged in the oil.
Fry the tortilla for about 2 minutes until it turns golden brown.
Use tongs or a spatula to remove the tostada and place it on the paper towel-lined plate to drain. Add a dash of salt to the tostada while still hot.
Repeat the process with the remaining tortillas, ensuring the oil maintains the proper temperature.
Prepare the Mexican Shredded Beef:
While the tostadas are draining, warm up the Mexican Shredded Beef (you can either reheat it in a pan or follow the instructions on Diego's website for full details).
Assemble the Tostadas:
Place the crispy tostadas on a serving platter.
Top each tostada with a generous portion of Mexican Shredded Beef.
Add a layer of shredded white cabbage on top.
Garnish with pickled red onions or fermented red cabbage, and if desired, crumbled feta.
Add Optional Toppings:
For extra flavour, serve with a dollop of thinned sour cream, your favorite hot sauce, and either a small scoop of guacamole or diced avocado on top.
Serve:
Serve the tostadas with optional sides of Mexican rice and Mexican pinto beans.
